ITHACA, NY — Every Sunday from noon to 3 p.m., Gola Osteria serves up brunch to hungry Ithacans off the beaten path on Quarry Street.
Ithaca Voice Dining visited Chef Sam Epps as he prepped two dishes from the current brunch menu, ricotta gnudi and orange ricotta pancakes.
Gnudi are the equivalent of larger, fluffier gnocchi. Made with ricotta instead of potato and very little flour, preparing them takes a delicate hand to prevent them from falling apart.
Gola’s gnudi are smothered in a foraged stinging nettle pesto, shaved Parmegiano Reggiano and focaccia breadcrumbs.
The orange ricotta pancakes have a lightly crisped exterior from being cooked individually on the stove-top before going in the oven to puff up.
The souffle-like pancakes are drizzled in Nutella chocolate sauce, and garnished with hazelnuts and fresh fruit.
