ITHACA, NY — If you’ve heard of Trumansburg’s Atlas Bowl, chances are you’ve also heard of a mythical beast known as “totchos.”
For the uninitiated, totchos are tater tot nachos. Start with crispy, golden brown tater tots, add copious amounts of cheddar cheese and sour cream, sprinkle on green onions, jalapenos, and bacon for good measure.
Ithaca Voice Dining headed to Atlas’ kitchen to see how it’s done with Chris Cooper and Matt Broshears, who took us step by greasy-delicious step.
The totchos are one of several hallmark dishes that are the highlight of a night of noshing, drinking and bowling at Atlas — fried Brussels sprouts, popcorn chicken, crispy tofu among them — and those are just the small plates.
Every so often the totchos will get a specialty makeover, like “Sloppy Tots”, a riff on a Sloppy Joe with ground beef, peppers, onions, Worcestershire sauce with cheddar, scallions and jalapenos.
